Harvesting ant eggs
Preparation and Gathering: The harvester often goes into the forest or places where there are many ants to look for nests. They will choose old ant nests, as these nests have more eggs.
Harvesting method: The harvester will carefully open the ant nests and collect the ant eggs using a small net or suitable tools. This process requires ingenuity and skill in order not to damage the ant nest and protect yourself from ant attacks.
Processing and use: After harvesting, ant eggs are washed and used as the main ingredient for dishes such as banh chung and spring rolls.
Making Banh Chung
Preparation of ingredients:
- Glutinous rice: Choose white glutinous rice and soak it in water beforehand so that when cooked, it will be flexible and shiny.
- Ant eggs: Ant eggs are washed and drained.
The process of making banh chung:
- Crisp the soaked glutinous rice to create a paste.
- Place a layer of glutinous rice on top of the sticky leaves, then place a layer of ant egg filling and continue with another layer of glutinous rice.
- Then wrap it tightly into a rectangle and then rearrange it into a U-shape until the whole banh chung.
Cook banh chung: Put banh chung in a pot of boiling filtered water, cook for 6 to 8 hours depending on the size of banh chung. When the water boils, let it cool.
